Chilled items & warm-weather notice

We ship chilled (perishable) foods with ice-gel packs, kept refrigerated. In warm weather, light oil sweating on cured products such as sucuk/pastırma, or softening of cheese, is normal and not a sign of spoilage — it returns to normal once chilled. Please refrigerate items immediately on delivery and be available to receive your order on the delivery day.

Perishable foods are exempt from the 14-day change-of-mind return; your statutory rights for genuine quality or safety issues remain unaffected.

Description

Yayla triangle yufka is a 360 g pack of thin pastry cut into large triangles, ready for rolling small börek at home. The shape saves you from cutting a round sheet into wedges yourself, so you can go straight to filling and rolling.

What triangle yufka is used for

Yufka is the unleavened flatbread pastry at the centre of Turkish börek making. It is thinner than a pancake but a little sturdier than Greek style filo, which means it holds a filling without tearing as easily. Pre cut triangles are made with one dish in mind above all: sigara böreği, the slim fried cheese rolls that get their name from their cigarette shape.

To make them, you place a line of filling along the wide edge of a triangle, fold in the sides, then roll towards the point. A dab of water or beaten egg seals the tip. The result is a neat cylinder that fries or bakes evenly, with a crisp shell and a soft middle.

Fillings to try

  • Crumbled white cheese with chopped parsley, the classic choice.
  • Lor or curd cheese mixed with a little dill and black pepper.
  • Minced beef cooked with onion, tomato paste and pul biber.
  • Mashed potato with spring onion and a pinch of cumin.
  • Spinach wilted with onion and squeezed dry so it does not leak.

Keep the filling fairly dry. Wet fillings soak through the pastry and make the rolls split in the pan.

Frying or baking

In the pan

Shallow fry the rolls in sunflower oil over a medium heat, turning them until golden on all sides, then drain on kitchen paper. Fry them seam side down first so the end stays closed. They are best eaten within the hour, while the shell still crackles.

In the oven

For a lighter version, brush the rolls with oil or melted butter and bake on a lined tray in a hot oven until coloured. You lose a little crunch compared with frying, but they hold well for a lunchbox or picnic the next day.

Handling the sheets

Thin pastry sheets dry out quickly once the pack is open. Work with a few triangles at a time and keep the rest under a clean, slightly damp tea towel. If a sheet cracks at the edge, patch it with a scrap from another triangle and a touch of water. Once you get the hang of rolling, a full pack can be filled in about twenty minutes, and you can freeze uncooked rolls on a tray, then bag them for another day.

Check the pack for storage directions, the best before date and allergens. Yufka is made with wheat flour, so it contains gluten.

Yufka or filo?

Shoppers sometimes look for Turkish filo when they mean yufka. The two are related, but yufka is less fragile and is not usually brushed with butter between every layer, so it is quicker to handle for everyday cooking. For layered trays and baklava you would pick a thinner sheet; for rolls and triangles, a triangle yufka like this one is the easier option.
