Greasy Proof Sheets

Picking the right size for your service

Match the sheet to the widest thing it has to hold. A 450 by 500mm sheet folds neatly around a burger, wrap or single portion of chips. The 450 by 700mm and 500 by 750mm sizes are the ones for whole flatbreads, large kebabs, sandwich platters and lining wide trays. If your main use is separating raw cuts in the fridge or during prep, meat protector paper is the correct product, since it is made for interleaving rather than wrapping. Larger sheets can always be folded down, but a sheet that is too small wastes two.

Handling and storage

Keep cases flat and dry, off the floor and away from steam or splashes, because damp sheets lose their grease resistance and stick together. Pull from the top of the stack with clean, dry hands and close the case between services. Greaseproof paper is for wrapping, lining and interleaving rather than direct high-heat cooking, so check the pack before putting sheets in an oven. Store them away from strong smelling cleaning products, since paper picks up odours.
