Chilled items & warm-weather notice

We ship chilled (perishable) foods with ice-gel packs, kept refrigerated. In warm weather, light oil sweating on cured products such as sucuk/pastırma, or softening of cheese, is normal and not a sign of spoilage — it returns to normal once chilled. Please refrigerate items immediately on delivery and be available to receive your order on the delivery day.

Perishable foods are exempt from the 14-day change-of-mind return; your statutory rights for genuine quality or safety issues remain unaffected.

Description

Pidemiss spinach and mozzarella pide comes in a box of three half baked pides, ready to finish in a hot oven at home. Each boat shaped Turkish flatbread is topped with spinach and melted mozzarella, and the box says you can have them on the table in about five minutes.

What is on top

According to the ingredient list, the pide is made from wheat flour, mozzarella cheese (26.4%), water, spinach (8.5%), sunflower oil, onion, capia pepper, sugar, Charleston pepper, eggs, salt, tomato, yeast, basil, black pepper, thyme and sweet pepper powder. So beyond spinach and cheese, there is a little onion, pepper and herb in the filling, which keeps it from tasting flat.

It contains gluten, milk and eggs, and it is made in a facility that also handles hazelnuts and sesame seeds. Bear that in mind if anyone in the house has a nut or seed allergy.

How to bake it

The preparation steps from Pidemiss are simple:

  1. Heat your oven to 240°C and wait until it reaches that temperature.
  2. Remove the pide from its packaging and place it in the oven.
  3. Bake for 5 to 6 minutes on the middle shelf.

Pidemiss also suggests adding butter and eggs before baking if you like. A small knob of butter melted over the edges gives a glossy, golden crust, and an egg cracked into the middle turns it into a fuller meal.

Why it works at home

Pide is the Turkish answer to pizza: a long, open flatbread with the edges folded up to hold the topping. In Turkey it comes from a pide salonu with a wood fired oven. At home, a frozen pide that is already half baked gets you close, because the dough has had its first bake and only needs crisping and the cheese melting.

Each box holds three spinach and mozzarella pide pieces, so you can bake one for a quick lunch or all three for a family supper. They also cook in a fraction of the time a takeaway takes to arrive.

Serving ideas

  • Slice into strips and serve with a glass of cold ayran.
  • Add a shepherd's salad of tomato, cucumber, onion and parsley.
  • Sprinkle with pul biber and a squeeze of lemon after baking.
  • Serve as party food, cut into small squares.
  • Bake with an egg on top and a few slices of sucuk for a weekend brunch.

Spinach and mozzarella pide for meat free nights

The filling contains no meat, which makes this a good option for a vegetarian supper. Check the full label if you follow a strict vegetarian diet, as cheese and egg ingredients vary between producers.

Storage

Keep the box in the freezer until you are ready to bake, and follow the storage advice on the pack. Do not refreeze once thawed. Baked leftover spinach and mozzarella pide keeps in the fridge for a day and reheat well in a hot oven for a few minutes.
