Duru Koçbaşı Nohut (8 mm) is a dried chickpea of the ram's-head type, sized at 8 mm. According to Duru, these are chickpeas of the Karaman and Konya region, known for their flavour and for shedding little skin when cooked. The ingredient list contains just chickpeas, and the product is of Turkish origin. Duru also sells a larger 9 mm grade; this pack is the 8 mm size.
The maker describes it as ideal for regional chickpea dishes, hummus-style meze and salads. Soak the chickpeas for 8 hours as directed, drain, then simmer in fresh water until tender. Use them for a classic Turkish nohut yemeği with onion, tomato paste and a little lamb or chicken, for pilaf with chickpeas, or mash them with tahini, lemon, garlic and olive oil for homemade hummus.
Store in a cool, dry place away from sunlight. Duru states a shelf life of two years for the pack.
