Chickpeas are one of the most versatile items in a Turkish store cupboard, equally at home simmered into nohut yemeği with rice, blended into hummus, or roasted whole as a snack. This small but focused range keeps things simple with two trusted brands and a couple of size grades to choose between.

What the chickpea range covers

Six products make up this category, all from DURU and BODRUM. Duru offers ram head chickpeas, known in Turkish as koçbaşı, in both 8mm and 9mm grades: Duru 1000gr (8mm) Chickpeas and Duru 1000gr (9mm) Ram Head Chickpea are the standard packs, with Duru 2000gr (8mm) Chickpeas and Duru 2000gr (9mm) Chickpeas as the larger equivalents for bigger households or batch cooking. Bodrum 1000gr ChickPeas offers a straightforward alternative for anyone who prefers that brand, and the sizing grade essentially describes how large and round the individual chickpea is, with 9mm being the biggest.

How to choose, store and cook chickpeas

For hummus, either grade works well once cooked and blended, but many cooks prefer the larger 9mm ram head chickpea for a creamier, more substantial texture in dishes where the chickpea is served whole, such as nohut yemeği. Chickpeas need a long soak, ideally overnight in plenty of cold water, before boiling for around an hour until tender; a pinch of bicarbonate of soda in the soaking water can help soften the skins. Once opened, keep the dried chickpeas in an airtight container in a cool, dry cupboard away from moisture, where they will keep for many months without any loss of quality. Cooked chickpeas also freeze well, which makes batch cooking a sensible way to always have some ready for a quick hummus or salad.

Chickpeas — frequently asked questions

How is chickpea used in Turkish cooking?›

Chickpeas form the base of nohut yemeği, a tomato-based stew served with rice, and are also cooked and blended for hummus. Roasted chickpeas make a simple snack, and the larger 9mm ram head grade is favoured for a creamier, whole-chickpea texture.

What is the difference between the sub-categories or grades here?›

The 8mm and 9mm figures refer to the size of the ram head chickpea; 9mm is the largest and gives a more substantial bite when served whole, while 8mm is a slightly smaller, still versatile everyday grade suited to most recipes.

Which brands are available?›

This range features DURU and BODRUM, both established names for Turkish pulses. Duru offers the widest choice of ram head chickpea sizes and pack weights, while Bodrum provides a straightforward standard 1000g pack.

Are the chickpeas paired well with other pantry items?›

Chickpeas pair naturally with rice, tomato paste, olive oil and flatbread, all commonly stocked in the wider pantry range, making it easy to put together a full nohut yemeği or hummus meal in one order.
