Duru İri Nohut is a dried chickpea of large size with a paler, more whitish colour than the ram's-head (koçbaşı) type. The only ingredient is chickpeas, grown in Türkiye and packed by Duru, a Karaman-based producer that states a shelf life of two years for the pack.
Chickpeas are central to Turkish cooking: slow-simmered nohut yemeği with onion and tomato, the classic Anatolian pilaf with chickpeas, soups, cold salads, meze and homemade hummus all start from the dried bean. The maker advises soaking the chickpeas for 8 hours before use. Drain, cover with fresh water and cook until tender; the cooking time depends on the batch and the size of the beans, so test as you go. A pinch of bicarbonate of soda in the soaking water is a common home trick for creamier hummus.
