This is one large, fresh pomegranate (Turkish: nar), chosen for size and juiciness and sold by the piece. Inside the leathery red skin are hundreds of sweet-tart ruby seeds (arils) that you can eat straight from the fruit, scatter over salads and mezze, or press into fresh pomegranate juice.

How to choose and store a pomegranate

A good pomegranate feels heavy for its size, has firm, taut skin and a slightly angular shape, which shows the seeds are full of juice. Keep the whole fruit in a cool place for up to a week or in the fridge for two to three weeks. Once opened, store the seeds in a sealed container in the fridge and eat within three to four days, or freeze them flat on a tray.

How to open a pomegranate without the mess

Cut off the crown and score the skin into quarters from top to bottom.
Pull the fruit apart over a bowl of cold water.
Push the seeds out with your thumbs: they sink, while the white pith floats.
Skim off the pith, drain the seeds and pat them dry.
