Description

Tulum is one of the best-known cheese styles of Anatolia, traditionally ripened in a skin or casing. This Yörem version is a goat tulum made in the Erzurum style. Goat's milk gives tulum a sharper, more distinctive character than cow's milk cheeses, and the texture of tulum is typically firm and crumbly rather than soft.

In the Turkish kitchen tulum is served in thin slices or crumbled at breakfast with fresh tomatoes, cucumber, olives and warm bread. It is also good crumbled over salads, folded into börek, gözleme and pide fillings, or stirred into scrambled eggs and omelettes. Because the flavour is strong, a small amount goes a long way.
