Fıstıkçı Kavrulmuş Dubai Çikolatası Kadayıfı is roasted kadayıf: the fine golden threads of shredded pastry used in Turkish and Middle Eastern sweets, sold ready-roasted in a 200 g clear plastic tray. The label on the tray, which carries the Fıstıkçı Antep Fıstığı Kuruyemiş logo, names Dubai chocolate as its intended use and repeats the product name in German as "Kadayif Geröstet", next to a serving-suggestion picture of a filled chocolate bar.
In a homemade Dubai-style chocolate bar, roasted kadayıf provides the crunchy layer: it is usually mixed with pistachio cream, sometimes with a little tahini, then spread between two layers of chocolate in a mould and chilled until firm. The same crunchy threads also work as a topping for ice cream, milk puddings, yoghurt bowls, brownies or cheesecake.
Crisp kadayıf takes up moisture quickly, so close the tray well after opening, keep it in a cool, dry place and use it by the date shown on the pack. Please check the pack label for ingredients and allergen information before serving, especially if anyone at the table avoids gluten or nuts.
