Bodrum Fennel Seeds, rezene in Turkish, are whole, pale green seeds packed in a 100 g stand-up pouch with a 'tear here and reseal' top. The front of the pack states that they are 100% natural with no artificial colours or additives. Fennel seeds have a sweet, aniseed-like aroma and a mild, slightly sweet taste.
In Turkey, rezene is widely brewed as a herbal tea: pour hot water over a teaspoon of lightly crushed seeds, leave to steep for several minutes and strain, perhaps with a slice of lemon or a little honey. The seeds are also used in bread and savoury pastry doughs, sprinkled over börek and çörek, added to pickles and brines, and used to season meat and fish dishes, sausages and stews. Toasting them briefly in a dry pan before crushing brings out their aroma.
Reseal the pouch after use, and follow the storage guidance and best-before date printed on the pack.
