Description

Ezogelin is one of the best-loved soups in Turkey: a thick, warming red lentil soup enriched with rice and bulgur, then finished with mint and red pepper. Knorr's 74 g sachet packs those ingredients into a dry mix, with red lentil flour as the main ingredient, plus rice, wheat flour, bulgur, tomato, onion, garlic, cumin and mint. One sachet makes four servings of about 250 ml each, and the pack photo shows the soup in a dark bowl streaked with red pepper oil.

Stir the contents of one sachet into one litre (five cups) of cold water, bring it to the boil while stirring, then simmer on a low heat for about ten minutes, stirring now and then, and let it rest briefly before serving. Serve it hot with a squeeze of lemon, a pinch of dried mint or chilli flakes, a spoonful of yoghurt if you like, and crusty bread or pide on the side. It is a classic starter at Turkish dinners, a comforting lunch on its own, and a traditional choice for breaking the fast in Ramadan.
