Thyme, or dağ kekik, is one of the herbs that defines Mediterranean and Turkish cooking. This Bodrum pouch holds 50 g of dried thyme in a tear-and-reseal bag, and the front states that it is 100% natural and made without artificial colours or additives. Note that in Turkish the word kekik is also used for oregano and related herbs, so the label's English word 'Thyme' is the best guide to what is inside.
Dried thyme has a warm, earthy, slightly peppery aroma that suits slow cooking. Rub it between your palms over lamb, chicken or beef before roasting, stir it into stews, lentil soup and tomato-based sauces, or add it to marinades with olive oil, garlic and lemon. It is also a classic with roast potatoes, grilled vegetables, white beans and eggs, and it can be steeped in hot water for a fragrant herbal infusion. Add it early for gentle background flavour, or crumble a pinch over a finished dish.
After opening, seal the pouch along its closure and keep it in a cool, dry cupboard away from heat and light, so the aroma stays strong for as long as possible.
