Chilled items & warm-weather notice

We ship chilled (perishable) foods with ice-gel packs, kept refrigerated. In warm weather, light oil sweating on cured products such as sucuk/pastırma, or softening of cheese, is normal and not a sign of spoilage — it returns to normal once chilled. Please refrigerate items immediately on delivery and be available to receive your order on the delivery day.

Perishable foods are exempt from the 14-day change-of-mind return; your statutory rights for genuine quality or safety issues remain unaffected.

Description

Limon tuzu, literally 'lemon salt', is the Turkish name for citric acid, the sour compound found naturally in lemons and other citrus fruit. This Bodrum pack contains the fine-grained version, marked 'FINE' on the front, in a green stand-up pouch with a 'Tear here and reseal' closure, and the pack notes 'No artificial colouring'. A small amount gives a clean, sharp sourness without adding the liquid or the flavour of fresh lemon juice.

In Turkish kitchens limon tuzu is a pantry essential. It is used to sharpen pickles and brines, to help jams and fruit preserves keep their bright colour, to add a lemony tang to stuffed vine leaves, soups and sauces, and to make homemade lemonade and sherbet drinks. Always use it sparingly, starting with a pinch dissolved in a little warm water and tasting as you go. Outside the kitchen, a spoonful in hot water is a common household way to loosen limescale from kettles, teapots and pans; rinse them thoroughly afterwards.

Keep the pouch tightly closed after opening and store it in a dry place, as the powder absorbs moisture and can clump. Keep out of the reach of children and avoid contact with eyes. Please read the label on your pack for the net weight, best-before date and other product information.
