Başak Pirinç Unu is plain rice flour in a 250 g carton from Başak of Akşehir. Rice flour is the key to Turkish milk desserts such as muhallebi, where it gives a soft, silky set without the stronger taste of wheat flour, and it is just as useful for thickening soups and sauces.
For a simple muhallebi, whisk the flour into cold milk with sugar, cook gently while stirring until thick and pour it into bowls to cool, finishing with cinnamon, coconut or a spoon of fruit sauce. Rice flour can also be used in cookies and shortbread-style biscuits, for light crispy coatings or for thickening creamy soups. Adjust quantities to your recipe.
Store the carton in a cool, dry place, close the flap well after opening and keep it away from strong odours and moisture. If you cook for someone with a gluten or milk allergy, please do not rely on this description: check the allergen statement on the pack.
