Chilled items & warm-weather notice

We ship chilled (perishable) foods with ice-gel packs, kept refrigerated. In warm weather, light oil sweating on cured products such as sucuk/pastırma, or softening of cheese, is normal and not a sign of spoilage — it returns to normal once chilled. Please refrigerate items immediately on delivery and be available to receive your order on the delivery day.

Perishable foods are exempt from the 14-day change-of-mind return; your statutory rights for genuine quality or safety issues remain unaffected.

Description

Bağcı scored green olives come in a 700 g jar, each olive cut with a few shallow slits so the brine can reach the flesh. In Turkey this style is called çizik zeytin, and the scoring gives the olives a softer bite and a more even, mellow flavour than whole green olives.

What is in the jar

The ingredients list is short: natural scored green olives, water, salt, citric acid as an acidity regulator, sliced lemon and ascorbic acid as an antioxidant. The lemon slices add a fresh, slightly bitter citrus note to the brine, which is a common touch with Turkish green olives. The product is labelled vegan and comes from Turkey.

Bağcı's own description says the olives are carefully picked from the branch and suit breakfasts, snack plates and salads. The jar weight covers olives and brine together, so check the label for the drained weight.

Why scored olives taste different

Green olives are naturally very bitter when picked. Curing in brine draws that bitterness out over time, and scoring each olive speeds the process and lets salt and acid soak further in. The result is an olive that is firm but tender, with a bright, gently salty flavour rather than a hard, sharp one. Scored green olives also take on flavour quickly if you add your own herbs or oil.

At home, scoring is done by hand with a small knife, one olive at a time. Cooks who cure their own green olives in autumn usually soak the scored olives in fresh water for several days, changing it often, before moving them into salted brine with lemon. A jar like this one saves you those weeks of soaking and waiting.

Ways to serve them

At breakfast

Put a small bowl on the table next to white cheese, tomatoes, cucumber, eggs and bread. Green olives with lemon wake up the palate and work against creamy cheese and butter.

On a meze plate

Drain the olives and dress them with olive oil, crushed garlic, chilli flakes, thyme and a squeeze of fresh lemon. Leave them for an hour and serve with bread, hummus and pickles. They also sit well beside cubes of white cheese and slices of sucuk on a drinks board.

In cooking

  • Chop and stir into a tomato and onion salad with parsley and pomegranate molasses.
  • Add to a chicken or fish tray bake for the last fifteen minutes.
  • Mix with walnuts, pepper paste and herbs for a simple olive salad in the style of southeastern Turkey.

Storage

Bağcı recommends keeping the jar in a cool, dry place before opening. After opening, keep the lid closed, leave the olives in their own jar and brine, and store them in the fridge. Use a clean spoon each time so the brine stays clear. As long as the olives stay covered in liquid, they keep well for several weeks.
