Pastırmalı sucuk brings together two classics of the Turkish deli counter: sucuk, the dry, garlicky, spiced sausage, and pastırma, beef that has been cured and coated in a spice paste. This 300 g pack from Koç Vleeswaren, a Dutch producer of Turkish-style charcuterie, holds a ring of sausage with pieces of cured spiced beef, sealed on a tray so it arrives neatly shaped.
Sucuk is almost never eaten raw. Slice it into rounds, lay them in a cold pan and let the fat render slowly; there is no need to add oil. Crack eggs over the top for sucuklu yumurta, the classic weekend breakfast, or tuck the browned slices into a toasted sandwich (sucuklu tost), onto pide dough or into a pot of dried beans for extra savoury depth. Served with tomatoes, cucumber, olives and fresh bread, it also makes a quick supper.
This is a chilled meat product: keep it refrigerated and follow the storage and use-by information printed on the pack. Once opened, wrap the remaining sausage tightly and finish it within a few days.
