Description

Tosun Pastırma by Gürkan is the round, sliced version of the Turkish cured beef speciality, modelled on the flavour of Kayseri. It is made from halal beef, and each slice is edged with a spicy coating. According to the manufacturer's product sheet, it is a formed beef product made from pieces of meat, cured with nitrite curing salt and seasoned with garlic and spices, and it comes in a 100 g fresh-keeping pack. Please note that the recipe contains wheat flour and monosodium glutamate.

In a Turkish kitchen pastırma is a breakfast favourite. Warm the slices for a few seconds in a dry pan and crack an egg over them for pastırmalı yumurta, or serve them cold on a breakfast board with kaşar cheese, tomato and cucumber. The slices also work well in a toasted sandwich, on top of a pide, folded into an omelette or as a savoury meze next to a bean salad (piyaz).

Keep the pack in the fridge at a maximum of +7 °C. The manufacturer's product sheet gives a shelf life of 62 days, so always go by the best-before date printed on the pack. Once opened, close the pack tightly and finish the slices within a short time.
