Gazi Beyaz Peynir Hirtenkäse Traditionell 60% is the richest cheese in Gazi's Hirtenkäse Traditionell range, which also comes in 45% and 55% versions. It is sold in a tall green 800 g tin with a red lid. Gazi, a brand of garmo AG in Germany, lists pasteurised cow's milk, salt, microbial rennet and lactic cultures as the ingredients. Its nutrition table gives 328 kcal, 30.0 g fat (20.3 g saturates) and 2.8 g salt per 100 g, and the higher fat level gives a softer bite and a rounder, creamier flavour than the lighter versions. The manufacturer marks it as suitable for vegetarians and halal.
It is a classic cheese for a Turkish breakfast plate with green and black olives, tomatoes, cucumber and warm bread. Gazi also recommends it for bakes and gratins, and it suits çoban salatası, savoury pastries such as börek and gözleme, toasted sandwiches and omelettes. For a milder taste, rinse the slices or leave them in cold water for a few minutes before serving.
Keep the tin refrigerated and use the cheese by the date printed on the pack. After opening, keep any unused cheese covered in its brine in a closed container in the fridge. Contains milk.
