Elifce Salamura Asma Yaprağı is a jar of vine leaves preserved in brine. The front label reads "Tokat tipi", meaning Tokat type, after the Tokat province of Türkiye, and repeats the product name in several languages, including "Vine leaves in brine". The jar holds 908 g net and comes in a wide-mouth glass jar with a yellow lid, so the leaves are easy to lift out one by one.
In a Turkish kitchen, brined leaves like these are the base of yaprak sarma. Take out as many leaves as you need, rinse them well and let them sit in hot water for a few minutes to soften them and take away part of the salt. Then roll them around a rice filling cooked with olive oil, onion, herbs and spices for the cold, olive-oil version, or around minced meat and rice for the warm version. The leaves can also line the bottom of a pot to protect the filling while it simmers, or be used to wrap cheese, fish or grilled bites for a mezze table.
Keep the jar closed in a cool, dark cupboard until you open it. Once opened, store it in the fridge and keep the remaining leaves covered with their brine. Always follow the storage instructions printed on the label of your jar.
