Başbaşı is the coarsest bulgur in Duru's range. The pack calls it "pilavlık tane bulgur" (whole-kernel pilaf bulgur) and "extra extra coarse bulgur", and states that it is made from durum wheat and stone-milled ("Taş değirmenin lezzete ikramı"). The large grains keep their shape and bite after cooking, so each portion stays loose and distinct rather than soft.
Like the other Duru pilaf grades, it should not be soaked or washed before use; the retailer label gives a ratio of one cup of bulgur to two cups of water, and the larger kernels may need a little longer on the heat than finer grades. It makes a hearty pilaf with onion, tomato paste and butter, a firm base for stuffed vegetables and vine leaves, and a chewy addition to winter soups or to a warm salad with roasted peppers, chickpeas and herbs.
It contains wheat gluten and is not suitable for gluten-free diets. Keep the unopened bag in a cool, dry place and, once opened, store it away from air, moisture and strong odours.
