Pilavlık bulgur is cracked wheat milled to a coarse grain that stays distinct and slightly chewy after cooking. As a wheat product it contains gluten.
It is the standard grain for bulgur pilavı with onion, tomato paste and pepper paste, and it can be cooked with vermicelli, chickpeas or a little diced tomato. Coarse bulgur also thickens soups, fills stuffed vegetables and works as the base for warm salads with parsley, lemon and olive oil.
