Duru Osmancık Pirinç is a rice variety grown in Türkiye, which Duru grades as first class, long grain, type C, with at most 5 percent broken grains. Duru describes Osmancık as ideal for pilav and easier to bring to the right consistency than baldo, which makes it a dependable everyday rice.
For a classic Turkish pilav, rinse the rice until the water runs clear and soak it in warm salted water for 15 to 20 minutes. Fry it briefly in butter or oil, then add boiling water; Duru's own instruction is 1 cup of rice to 2 cups of boiling water. Cover and cook gently until the water is absorbed, then rest the pot under a cloth for ten minutes. The grains come out separate and tender, ready to serve beside stews, kebabs or chicken, or to use as the filling for dolma and sarma.
Keep the pack in a cool, dry place away from direct sunlight. Duru gives the rice a shelf life of two years.
