Description

Muhallebi is one of the oldest milk desserts of Turkish cooking, and the mastic version, sakızlı muhallebi, is a favourite on the Aegean coast and in pastry shops across Turkey. This Dr. Oetker mix is based on sugar, wheat flour, starch and rice flour and is flavoured with mastic gum, which gives the pudding its distinctive resinous, slightly cooling aroma. It contains wheat, so it is not gluten-free.

To prepare it, pour 750 ml of milk into a saucepan, add the sachet and cook over medium heat, stirring constantly. When it starts to boil, reduce the heat, add 25 g (one tablespoon) of margarine and cook for three to four more minutes. Let it cool briefly, then beat it with a mixer on the lowest speed for about five minutes. Pouring it into the bowls from a height gives the surface the characteristic bubbly look.

Serve it chilled on its own, dusted with a little cinnamon if you like, or spoon it into ready-made pastry shells for a simple mastic tartlet. Keep the unopened 150 g sachet in a cool, dry place.
