Zahtar (also spelled za'atar) is a classic Middle Eastern and Anatolian seasoning, traditionally built around thyme-type herbs, sesame and a tart note such as sumac. Bodrum's 100 g pouch is marked "100% natural" and "no artificial colours or additives", and it has a tear-here-and-reseal opening so the blend stays fragrant between uses.
In a Turkish kitchen it is most at home at breakfast: stir it into olive oil and dip warm bread into it, sprinkle it over sliced tomatoes, boiled eggs, labneh or white cheese, or bake it onto simit and flatbreads. It is just as good rubbed over chicken or lamb before roasting, tossed with potatoes and carrots in the oven tray, or shaken over a bowl of hummus.
Close the pouch firmly after every use and keep it in a cool, dry cupboard away from sunlight and steam from the hob. Please read the label on your pack for the exact ingredient list and allergen information, as zahtar blends commonly contain sesame.
