Tosya is a much-loved Turkish pilaf rice, named after the town of Tosya in Kastamonu province, the area it is traditionally linked with. Its medium-length grains cook into a soft, plump pilaf that keeps its shape on the plate. This Bodrum pack holds 2 kg, which makes sense for large families, weekend guests, iftar tables and anyone who cooks pilaf several times a week.
For a Turkish-style pilav, wash the rice well and drain it in a sieve. Warm butter, or butter with a splash of oil, in a heavy pan and stir the rice in it for a couple of minutes until the grains turn glossy. Add hot stock or water, about one and a half cups for each cup of rice, season with salt, cover and leave on low heat for around 15 minutes until the liquid is absorbed. Take the pan off the heat and let the pilav rest for 10 to 15 minutes before serving. It pairs well with chicken, stews, meatballs and roasted vegetables, and leftovers reheat well in a pan with a spoonful of water.
Because the pack is large, keep it in a cool, dry place away from direct sunlight and close it tightly after each use, or decant the rice into an airtight container.
