Bodrum Bread Crumbs, known in Turkish as galeta unu, are a fine crumb made from just three ingredients: wheat flour, salt and yeast. The 500 g pack is a kitchen staple for anything that needs a crisp coating or a little extra body, and the label states that the product is suitable for vegans. It contains wheat (gluten).
For a crunchy coating on fish, meat or cheese, the pack suggests coating the pieces in flour, dipping them in beaten egg and then rolling them in the crumbs before cooking. The same method works well for chicken or sliced aubergine. The label also recommends sprinkling the crumbs over gratins and pasta bakes for a crunchy topping, and using them in stuffings, to thicken stews or in meatloaf. In Turkish cooking galeta unu is a familiar binder for köfte mixtures. For a more flavourful crust, mix the crumbs with herbs, spices or lemon zest, as the pack suggests.
Store the pack in a cool, dry place away from direct sunlight. After opening, close it again with the tab provided or move the crumbs to an airtight container.
