Description

Dil füme is smoked beef tongue, a long-standing favourite on Turkish delicatessen counters. Traditionally the tongue is cured, cooked and smoked before being sliced thin, which gives it a tender, almost silky bite and a mild smoky finish. This Best Farm pack holds 100 g of ready-sliced beef tongue, labelled ready to eat, so it can be served cold straight from the tray.

It is traditionally eaten in sandwiches with sliced pickled gherkins and a little mustard, or laid on a breakfast and meze board beside tomatoes, olives and fresh bread. Chopped finely it can be added to a potato or pasta salad, and a few slices on warm toast with a squeeze of lemon make a simple, satisfying snack.
