Description

Sütaş Traditional Butter (tereyağı) is a churned butter in a 250 g tub with a clear dome lid, and the label on top of the lid reads 'Yayık Tereyağı'. The tub states that it is made from fresh milk and contains at least 82 percent milk fat. According to Sütaş, its churned (yayık) butter is obtained by churning yoghurt and cow's milk cream, and no salt is added, so the flavour is simply creamy and rich.

In Turkish kitchens butter is used for far more than spreading. Melt a spoonful to start rice or bulgur pilaf, brown it with a little flour for a béchamel or a soup base, brush it over börek and gözleme before baking, or finish a pan of eggs, menemen or sucuklu yumurta with a knob of it. At breakfast it goes beautifully with honey, kaymak or jam on warm bread. A 250 g tub is a practical size for a household that cooks and bakes regularly.
