Yörem Kombi Böreklik is a soft, white cheese-style product in brine, sold in an 800 g tin for anyone who bakes börek and savoury pastries at home. The brand sells it in English as 'Combi Creamy in Brine' and lists pasteurised skimmed milk and palm oil (22%), with table salt, lactic acid cultures and microbial rennet. Because part of the fat comes from palm oil rather than from milk, it is not a traditional full-milk white cheese, but it is made to be used in the same way. It contains milk. The brand states that all of its products are halal certified, and the tin carries a halal logo.
In Turkish kitchens, a soft white filling like this, often called böreklik, is the classic choice for su böreği, sigara böreği, poğaça and gözleme. Crumble or mash it with finely chopped parsley and a little egg or yoghurt, then spread it between yufka sheets or wrap it in dough. It can also be diced into salads, tucked into a toasted flatbread, or served at breakfast with tomatoes, olives and fresh bread. It is packed in brine and the manufacturer lists 3 g of salt per 100 g, so taste a filling before adding extra salt.
Keep the tin in the fridge and follow the storage and best-before information printed on it. Once opened, keep any remaining pieces covered in their brine in a clean, closed container and use them promptly.
