Nuh'un Ankara Farfalle is a bow-tie (kelebek) pasta made from a single ingredient, durum wheat semolina. The pinched centre and wider wings hold on to sauce, so it suits tomato and vegetable sauces, creamy chicken and mushroom sauces, and cold pasta salads packed for lunch or picnics. Its bow shape also makes it a fun choice for children's plates.
Cook it in plenty of boiling, lightly salted water and follow the time printed on the pack. Drain, toss with a little olive oil or butter so the pieces do not stick, and finish with your sauce. For a Turkish-style serving, try it with garlic yoghurt, a spoonful of tomato paste fried in butter and a sprinkle of chilli flakes, or bake it with minced meat and a light béchamel.
Per 100 g of dry pasta the manufacturer lists 357 kcal, 10.7 g protein and 2.9 g fibre. The 500 g bag contains wheat and therefore gluten. Keep it in a dry, cool place away from sunlight; the manufacturer gives a shelf life of two years from the production date.
