Nuh'un Ankara İrmik is semolina milled from durum wheat, sold in a 500 g vacuum pack that the brand presents on the front as the first vacuum-packed semolina in Türkiye. According to the manufacturer, vacuum packing removes the air from the pack and protects the semolina from spoilage without any additives. Semolina is one of the most useful dry-store staples in Turkish home cooking. As a durum wheat product, it contains gluten.
Irmik is best known as the base of irmik helvası, which is toasted slowly in butter and finished with hot milk or syrup and pine nuts. It also gives revani and other syrup-soaked semolina cakes their tender crumb, thickens milk puddings such as irmik tatlısı, and is stirred into köfte mixtures or used as a light coating for fried vegetables and fish. A spoonful added to soups gives a smooth body.
The manufacturer recommends storing it away from sunlight in a dry, cool, odour-free place and gives a shelf life of 18 months from production. After opening, move the semolina into an airtight jar so that it stays dry and free of kitchen odours.
