Nuh'un Ankara Star Noodles, known as yıldız şehriye, are tiny star-shaped pasta pieces made only from durum wheat semolina. They are popular in Turkish soups, especially tomato, chicken and lentil soup, where the stars make a bowl look festive and are easy for children to eat with a spoon.
The manufacturer gives a cooking time of 8 to 10 minutes. Stir a handful into simmering soup for the last 8 to 10 minutes of cooking, or boil them separately in lightly salted water and drain if you want a clearer broth. They also work in a simple pilaf: toast in butter, add water and simmer covered until the liquid is absorbed.
Per 100 g of dry pasta the manufacturer lists 357 kcal, 10.7 g protein and 2.9 g fibre. The product contains wheat and gluten. Store the 500 g bag in a dry, cool, odourless place away from sunlight; shelf life is two years from the production date.
