Lahana turşusu, pickled white cabbage, is a staple of Turkish winter tables. This Melis jar holds pale, thick cabbage pieces in brine, and the label carries a "fermented" seal. The net weight is 650 g, of which 400 g is the drained weight, so it is a generous jar for a family.
Fermented cabbage has a clean, sour flavour and a satisfying crunch. Serve it chilled as a side dish with grilled chicken, meatballs, kebabs, beans and pilav, or add it to a meze plate and to sandwiches and wraps. It is also tasty chopped into salads with onion, parsley and a drizzle of olive oil, or served with a little oil and a pinch of chilli flakes for a quick Turkish-style appetiser. In Türkiye the sour pickle juice is also traditionally drunk on its own in winter, though this is a matter of taste.
Keep the unopened jar in a cool, dry place away from sunlight. After opening, store it in the fridge with the cabbage covered by the brine and use a clean utensil. Please check the label on the jar for the exact ingredients, allergen information and best-before date.
