Description

İşkembe çorbası, tripe soup, is a Turkish classic that is traditionally eaten late at night or early in the morning and is closely linked with Turkey's traditional soup houses, the işkembeci. This Knorr sachet makes a convenient version at home. The mix is built on wheat flour and starch with plenty of garlic, whey and yoghurt powder, vinegar powder and a small amount of dried, boiled tripe, which together give it the creamy, garlicky, slightly tangy character of the original.

Add the sachet to one litre of cold water, stir until it boils, then simmer on a low heat for about ten minutes and serve; the pack makes four servings of 250 ml. Turkish soup houses serve it with crushed garlic in vinegar, a spoonful of chilli butter (melted butter with pul biber) and a squeeze of lemon, so set those on the table and let everyone season their own bowl. A slice of bread on the side makes it a satisfying small meal.
