Description

Béchamel is the creamy white sauce that holds many Turkish oven dishes together, and this Knorr sachet takes the guesswork out of it. The powder is a mix of wheat flour, maize starch, fat powder, skimmed milk powder, salt and a natural butter flavouring, so there is no need to make a roux first. The pack photograph shows the classic use: a layered pasta bake with minced meat under a golden, set white topping.

To prepare it, pour 750 ml of cold milk (3¾ cups, as the front of the sachet puts it) into a pan, add the whole sachet and whisk until it comes to the boil. Then cook over a low heat for five minutes, stirring all the time, and use it hot. It works beautifully in fırın makarna (baked pasta), with chicken and vegetable gratins, spooned over roasted aubergine or courgette, or between sheets of lasagne. For extra richness stir in a knob of butter, a pinch of nutmeg or a handful of grated kaşar once it is off the heat.

The front of the sachet also carries a koruyucu içermez (no preservatives) badge. Store it in a cool, dry place. The mix contains wheat and milk, so please read the allergen information on the pack before cooking for guests.
