Ikra Hakiki Kıymalı Kayseri Mantısı is a frozen, medium-size (orta boy) Kayseri-style mantı: small pinched parcels of dough filled with seasoned minced beef. The pack label lists beef, onion, water, flour, eggs, vegetable oil, salt and spices, and carries a halal mark. Mantı is one of the best-known dishes of Central Anatolia and is traditionally made for family gatherings; this pack lets you serve it without the hours of rolling and folding.
The label's method: for about 600 g of mantı (four portions), tip the dumplings straight from frozen into a wide pan of boiling salted water and cook for about 10 minutes, until they smell of cooked dough, then drain. Serve the mantı hot with garlic yoghurt and a tomato-paste sauce spooned over the top, as the label suggests. Many Turkish cooks also add a drizzle of butter with red pepper flakes and a pinch of dried mint or sumac.
Keep the pack frozen at -18 °C and check the date printed on it. The label advises using the mantı straight after thawing and not refreezing it.
