İçli köfte, also called kibbeh, is one of the best-loved dishes of southern Turkish and wider Levantine cooking: a thin shell, traditionally made with fine bulgur, is wrapped around a savoury filling and shaped into a pointed oval. İkra offers it ready-made in a frozen 600 g box, so the labour-intensive shaping is already done. The front of the box shows golden, oval pieces served with greens and a lemon wedge.
Prepare the pieces exactly as described in the cooking instructions printed on the pack. İçli köfte is usually served hot as a starter or as part of a meze table, with lemon wedges, a bowl of garlic yoghurt, a green salad or a spoonful of spicy pepper paste. It also makes a satisfying main course next to rice or bulgur pilaf and pickled vegetables. A box kept in the freezer is handy for unexpected guests, family dinners or iftar tables, and the pieces are best enjoyed hot, as soon as they are cooked.
Keep the box frozen until you are ready to cook and follow the storage advice on the pack; as a general rule, frozen food that has thawed should not be refrozen. Please read the ingredient list, allergen information and nutrition table on the pack before serving, especially if anyone at the table has a food allergy or follows a gluten-free or other special diet, since the full recipe and allergen details are printed only on the pack.
