Fresh Frost Okra Ladyfingers (Sivri Bamya) are slim, pointed okra pods sold frozen in a 450 g bag, so you can cook the classic Turkish bamya dish in any season without hunting for fresh pods. The pack shows whole green pods and a vegetable icon.
The usual way to cook sivri bamya in Turkey is as a slow olive-oil or tomato stew: soften sliced onion in oil, add garlic and tomato paste or grated tomato, then the okra and a little water, and simmer until tender. A squeeze of lemon helps keep the pods firm, and it is typically served with rice or bulgur pilav and a spoon of yoghurt. Okra also goes well in meat stews and in lamb or chicken bamya yahni.
Keep the bag frozen until you cook and cook the okra thoroughly, as the pack instructs. Once opened, use the rest promptly and do not refreeze okra that has completely thawed.
