Midyat bulgur is the name Duru gives to its fine-pilaf grade: the manufacturer lists it as "Midyat Bulgur (İnce Pilavlık Bulgur)", and this pack reads "Medium Coarse Bulgur", "Bulgur gros moyen" and "İnce Pilavlık Bulgur". The front is marked "Stone milled" and carries "100% natural" and "no trans fat" claims, and the ingredient line on a Duru Midyat export label names medium coarse bulgur of durum wheat. As the name "medium coarse" suggests, the grains sit between Duru's coarse pilaf bulgur and its fine köftelik grades.
That middle size makes it versatile. Use it for everyday pilaf with onion, tomato paste and butter, for lentil and bulgur soups, in salads when you want more bite than fine bulgur gives, or in stuffings for peppers, courgettes and cabbage leaves. Duru's instructions for this grade are not to soak or wash it and to cook one cup of bulgur with two cups of boiling water; adjust the cooking time to the texture you like.
Durum wheat contains gluten, and Duru declares wheat gluten for this bulgur, so it is not suitable for gluten-free diets. Store the bag in a cool, dry place out of direct sunlight, and keep the pack tightly closed after opening.
