Sefer Kitel, labelled in English as jerish or fine cracked wheat, is a very small-grained bulgur made by Duru from durum wheat. The pack carries the line "Durum buğdayından üretilmiştir" (made from durum wheat), and the same product is marked on other packs as suitable for içli köfte, the stuffed bulgur-shell dumplings of southeastern Turkey. Because the kernels are cracked so finely, they soften quickly and can be kneaded into a smooth, pliable dough, which is exactly what a thin, even köfte shell needs.
In the kitchen, sefer kitel is not limited to içli köfte. The fine grain works well in kısır with pomegranate molasses and tomato paste, in bulgur köfte, in meatless lentil-style köfte and in thick winter soups. A simple way to use it is to moisten it with a little hot water, rest it until the grains are tender, then work in finely chopped onion, pepper paste, olive oil and spices; for an içli köfte filling, cook minced meat with onion, walnuts and spices and wrap it in the dough.
As a wheat product it contains gluten, so it is not suitable for gluten-free diets. Keep the bag tightly closed in a cool, dry cupboard away from moisture and strong odours, and transfer opened bulgur to an airtight jar.
