These Bodrum chickpeas come cooked and ready to eat in an 800 g tin, so the soaking and long simmering that dried nohut needs is already done. The front of the tin carries a 'Prodotto Italiano' badge and a '1 of 5 A-Day' mark. Open, drain and rinse, and the chickpeas are ready for the pan, the blender or the salad bowl.
In Turkish cooking they are the starting point for nohut yemeği simmered with onion, tomato paste and sometimes lamb, for nohutlu pilav served with roast chicken, and for a quick lemony salad with parsley, red onion and sumac. Blend them with tahini, lemon, garlic and olive oil for a smooth hummus, or crisp them in a hot oven with paprika and cumin for a crunchy snack. Because they are already cooked, they only need to be warmed through in soups and stews.
Keep unopened tins in a cool, dry cupboard. Once opened, transfer any unused chickpeas to a covered container in the fridge and follow the storage advice printed on the tin.
