Başak Cocoa is a ground cocoa powder from the Turkish food maker Başak Gıda. The box describes it as ground, reduced-fat and alkali-processed. Alkali treatment, often called Dutch processing, generally darkens cocoa and softens its natural acidity, which is why this kind of cocoa gives cakes and puddings a deep brown colour. It comes in a 100 g box, enough for several bakes.
In a Turkish kitchen cocoa like this goes into kakaolu kek, sütlü puding and supangle, brownie-style tray cakes, biscuit dough and homemade ice cream. For a simple warm drink, whisk a spoonful into hot milk with sugar. Sift the powder with the flour or starch before adding liquid so it does not form lumps.
Keep the box closed in a cool, dry cupboard, away from steam and strong smells, and shake or sift before use if the powder has settled. Check the pack for the best-before date and for the ingredient and allergen information before use.
