Muratbey Topi is a soft, fresh white cheese formed into small round balls, a playful take on the brined cheese that anchors the Turkish breakfast table. The tub holds 200 g of drained cheese in its brine. Muratbey, a dairy company based in Uşak, Türkiye, describes Topi as having at least 25% less salt and states that it contains no trans fat, sweeteners or gluten. Per 100 g it provides about 243 kcal, 20 g fat, 14.5 g protein and 1.8 g salt, according to the producer's own nutrition table.
Because the balls are already portioned, there is nothing to slice. Toss them through a tomato, cucumber and rocket salad with olive oil and dried oregano, thread them onto skewers with cherry tomatoes and basil, or tuck a few into a warm menemen just before serving. They sit well on a classic Turkish breakfast spread next to olives, honey, fresh bread or simit, and their small size makes them easy to pack into lunchboxes or serve as a quick snack with tea. A brief rinse under cold water takes the edge off the surface salt if you prefer a milder taste.
Keep the tub refrigerated at +2 to +4 °C in its original packaging. Once opened, eat the cheese within a short time and keep whatever is left covered in its own brine, as the producer recommends.
