Melis Sheep's Milk Cheese is a Bulgarian-style white brined cheese made from fresh pasteurised sheep's milk, according to the pack, and sold as a full-fat cheese in a 200 g tray. Matured in brine, it has the clean, salty and slightly tangy character that brined sheep cheeses are known for, with a dense, creamy bite that holds together when sliced.
On a Turkish table it belongs wherever beyaz peynir would go. Slice it onto a breakfast plate beside tomatoes, cucumbers, olives and fresh bread, crumble it into a shepherd's salad, or use it as the filling for a hot börek, gözleme or a cheese toast. Its salt level is generous, so if you plan to bake it or pair it with sweet things such as watermelon or honey, a short soak in cold water beforehand softens the saltiness.
The pack is labelled to be kept refrigerated between 0 and 7 degrees Celsius, with the best-before date printed on it. Once the tray is opened, keep the remaining cheese covered or submerged in lightly salted water in the fridge and finish it within a few days. Check the pack for the full ingredient list and allergen information before serving.
