Tel peyniri, known in different regions as çeçil, civil, saçak or simply pulled cheese, is a fresh Turkish cheese whose fibres are separated into thin threads, a little like soft cotton candy. Muratbey makes it from pasteurised, full-fat cow's milk and describes it as rich in flavour and high in protein: the producer's nutrition table lists about 304 kcal, 25 g fat and 19 g protein per 100 g. It also states that the cheese contains no trans fat, sweeteners or gluten. Salt is listed at about 3.4 g per 100 g, so a small amount goes a long way.
The shredded texture makes it very versatile. Serve it cold on a breakfast board with olives, tomatoes and warm bread, scatter it into a green salad, fold it through a soft omelette just before it sets, or stir it into hot pasta so that it melts into the sauce. It is a classic choice for toasted sandwiches and for the Turkish pastries known as gözleme and pide.
Store the pack refrigerated at +2 to +4 °C in its original packaging. After opening, finish the cheese within a short time and keep any leftover threads covered.
