Melis Buffalo Cheese, called manda peyniri in Turkish and Büffelkäse in German, is a white cheese made from buffalo milk and labelled on the pack as Bulgarian. The small print says it is produced in Bulgaria for Gima (UK) Ltd. The 200 g pack has a cream label with the red Melis logo, green lettering and a photo of a water buffalo. Buffalo milk is richer in fat than cow's milk, which is why buffalo cheeses are known for their full, creamy character.
Serve it the way you would serve white cheese at a Turkish breakfast: sliced or crumbled next to tomatoes, cucumbers, olives, fresh herbs and warm bread, with a glass of black tea. It also suits a shepherd's salad, a gözleme or börek filling or a tray of oven-roasted vegetables, and you can bake it with a drizzle of honey and a handful of walnuts. For a mezze platter, pair it with dried apricots, figs or a spoonful of pekmez for a sweet and salty contrast.
The distributor sells it as a chilled product (1 to 8 °C), so keep the pack in the refrigerator and follow the date and storage instructions printed on it. Once opened, keep the cheese covered and use it within the time indicated on the pack. It is a milk product, and the full ingredient list and allergen information are on the label.
