Marmarabirlik Dilimli Yeşil Zeytin is a jar of green table olives cut into thin rings and kept in brine, so there is no stoning or slicing to do before you start cooking. Marmarabirlik is the Marmara Region olive growers' cooperative union, and this 350 g glass jar carries its familiar light-green label.
In the Turkish kitchen sliced green olives are a quick way to add a salty, slightly tangy note. Fold them through a cheese and herb omelette, sprinkle them over a homemade pide or pizza, stir them into a tuna or potato salad, or layer them into a toasted sandwich (tost). They also work well folded into poğaça and açma dough, or mixed into a soft cheese spread for a weekend breakfast table.
Drain the olives before use and, if you find them very salty, rinse them briefly under cold water. Keep the unopened jar in a cool, dry place; the manufacturer lists a 24-month shelf life for this jar. Once opened, keep the olives covered in their brine in the fridge and use them up reasonably soon.
