Katmer is one of the great pastries of Gaziantep, the south-eastern Turkish city that is also the home of Antep pistachios. Traditionally, paper-thin sheets of dough are layered with butter or kaymak, ground pistachios and sugar, then cooked until the layers turn crisp and golden. This Lezza box, named Pista Leaves, offers the pistachio version, and the photo on the pack shows triangular portions with a generous topping of finely ground green pistachio.
In Turkey katmer is eaten at breakfast and as a dessert, often warm and with a spoon of kaymak or a scoop of vanilla ice cream, together with a glass of tea. This pack is sold in the frozen range, so keep it in the freezer until you need it and follow the preparation and defrosting instructions printed on the box, as cooking time depends on your oven or pan. Serve it warm so the layers are crisp, and add a little extra ground pistachio if you want more colour.
The box contains 150 g. As its name says, it contains pistachio, which is a tree nut, and katmer dough is traditionally made with wheat flour, so always read the ingredient list and allergen information printed on the box before serving.
