Burcu Cucumber Pickles (Salatalık Turşusu) are small whole cucumbers preserved in brine and sold in a 580 g glass jar marked "No: 1". The label names the product in four languages, including the German Gurken in Salzlake, meaning cucumbers in brine. The nutrition panel we checked shows just 6 kcal per 100 g, while salt is high at 3.5 g per 100 g, as you would expect from a proper jar of turşu. The ingredient details differ between the label versions we found, so check the jar itself for the full list.
In Turkey pickles are not a garnish but part of the meal. A small plate of turşu sits beside rice pilaf, dried bean stew (kuru fasulye), lentil soup and grilled meat. Slice the cucumbers into sandwiches, kebab wraps or burgers, add them to a mezze board with olives and white cheese, or chop them into potato salad and yoghurt dips for a bright, salty lift.
Keep the unopened jar in a cool, dry place away from direct sunlight. Once opened, store it in the refrigerator and make sure the cucumbers stay covered by the brine.
