Sauerkraut is finely shredded white cabbage preserved through lactic fermentation, which gives it a bright, sour flavour and a firm texture. Bodrum packs it in a large glass jar, and the label lists just three ingredients: sauerkraut (73%), water and salt. It is marked suitable for vegetarians and vegans and provides 43 kJ (10 kcal) per 100 g, with 2 g carbohydrate, 0.7 g protein and less than 0.1 g fat. Salt is 2 g per 100 g, so it works best as a tangy accompaniment rather than a main dish.
In Turkish homes pickled cabbage is a regular companion to köfte, bulgur pilaf and bean dishes. Drain a few forkfuls and dress them with sliced onion, olive oil and a pinch of chilli flakes for a quick meze, or fold some through a potato salad. Warm it gently in a pan with onion and a spoon of tomato paste for a hot side, stir it into a winter soup or stew towards the end of cooking, or tuck it into a wrap with grilled chicken. For a milder taste, rinse it briefly under cold water before use.
Keep the unopened jar in a cool place away from sunlight. Once opened, we suggest closing the lid tightly, keeping the jar in the fridge and making sure the cabbage stays covered by its brine.
